Citrus Vinaigrette

Ingrediants

1/2 cup fresh squeezed citrus juice. Use whatever you have. 

I like a combo of Cara Cara oranges and some lime juice for extra punch. 

2 tbs. White wine vinegar 

2 tsp Dijon mustard

2 tsp  honey, more to taste

1/2 cup extra-virgin olive oil 

1/4 tsp kosher salt, more to taste 

Couple grinds of black pepper 

Instructions

In a small bowl whisk together the citrus juice, Dijon, honey, salt + pepper 

Drizzle in the olive oil while whisking until emulsified. 

Or, alternatively, add all ingredients into a glass jar with a tight fitting lid and shake. 

Toss vinaigrette with thinly sliced fennel and spinach (or greens of your choice) and orange segments
